A rather lengthy explanation )

To sum it all up, I’m looking for suggestions on different carbohydrates she can eat that do not include wheat, peanuts, soy, rice, or corn, and some kind of bread recipe would be absolutely fantastic as well. She can have yeast and potatoes, which helps a lot. Additionally, any good granola recipes or pasta recommendations would be much appreciated.
Thanks so much!

Coconut Cake

  • Dec. 27th, 2009 at 10:24 PM
I set myself to the task of recreating my Grandmother's coconut cake this holiday. It was something my entire family looked forward to, but with her death the recipe was lost (we thought). After Thanksgiving I tried one recipe, but it wasn't quite right. I was getting set to try another when my Mom told me she had found a recipe card with my Grandmother's recipe. She sent it to me and I made it last Friday. It was like bringing a Christmas memory to life.

It's not exactly a traditional Southern recipe, since the frosting isn't a true seven minute frosting, but it's still damn yummeh. And it has absolutely no regard for health. It takes 17 eggs to make this cake.

Red Velvet cake

  • Dec. 28th, 2009 at 1:02 PM
I'm looking for a different red velvet recipe. I've been told mine is a little dry, so I need something moist. I'm seeing a wide variety of recipes out there. Does anyone have a good, moist recipe they use?

♥ Your cupcake history: I have been baking since I was in diapers. The first thing I baked was actually a bunch of cup cakes! They came out REALLY horrible, they were hard as rocks and the frosting I made didn't come out right so I ended up using dirty/mud and made them look like chocolate cup cakes....fed them to my family.....yeah that did not turn out so well LOL

Why you like cupcakes: Cup cakes are just so friendly. Even the scariest cup cakes and gruesome..they're still so friendly. You can't go wrong with cup cakes.

Anything to share?: I think one of my best memories of making cup cakes was for Comic Con 2009 this year. A comic artist I follow by the name of Drew Rausch said in a blog he would work for cup cakes. So I took him up literally on that post and I baked him rum/vanilla cup cakes with rum-butter cream frosting. Now mind all of you....When I put rum in my baked items, they can and WILL put you over the limit on the breathalizer test. It has been tested various times and proven true :).
But of course, they always taste delicious! Well..I showed up with about a dozen cup cakes and he about crapped his pants. He drew me a tattoo for the cup cakes and went on film for demented puppet filming I do with a friend. It was awesome. Here some photos from that :D

Recipe Request

I was hoping somebody out there had some delicious recipes that call for a ton of honey. My in-laws gave us a wonderful basket full of goodies, but the only item I wasn't sure what to do with was the gallon jug of honey!

Savory or sweet, does anyone have anything that uses honey as a main ingredient? I drink tea, but not that often. It's going to take me years to use it all up! :) Thanks in advance!

USC Gamecocks cake

  • Dec. 27th, 2009 at 2:15 PM

It's my boyfriends 21st birthday tomorrow and I really wanted to do something special for him. He's OBSESSED with the University of South Carolina Gamecocks. He has USC shirts, hats, belts,  shoes (crocs, actually), even a golf bag. If it has the USC logo on it, he owns it.  So I really wanted to involve USC in with his cake. I searched online a bit and found the cute little cartoon Cocky and knew that I had to make a buttercream transfer. I was most proud of this. Especially that I changed his hands around so he was holding up a 2 & a 1 :D
It was a fairly easy process, aside from covering the 2 in fondant. I had a really hard time getting the fondant in that area up near the top--but I think was able to make it look semi-decent.
The 2 is vanilla cake (Magnolia)
The 1 and the sign are chocolate cake (pioneer woman)
both were filled with vanilla bean swiss meringue buttercream (HTEAC)

Cupcake question

  • Dec. 27th, 2009 at 12:15 PM
Do red velvet cupcakes have to be red?

I want to make red velvet cupcakes but dye them rainbow (like this). Will all of the colors still come out vibrant even though I use cocoa powder and vinegar in the recipe?

Oh- And does anyone know what tip I need to buy to have frosting like this?

Fruit Tart Cupcakes

  • Dec. 27th, 2009 at 6:06 PM
Possibly the lightest, most delicious cupcake I have ever made, or eaten. It's moist, and soft, and ohsodelicious.

Did I mention that it's also perfect and summer-y? It is perfect, and I assume it could also be done for wintery months, for those of us in America.  And so, without further ado, I give you the fruit tart cupcake!

Cherry Sugar Blossoms

  • Dec. 26th, 2009 at 10:49 PM
This was another new cookie for my Christmas cookie gift boxes this year, and again, I was so pleased with the way this turned out. The great thing is that one recipe makes about 5 dozen cookies! I'll post the recipe later, but wanted to get this picture up:

Cherry sugar blossoms--part of this year's Christmas baking gifts

And a closeup. . .

A closeup
To say I had... issues... with the recipe I chose to use (Y's Scandinavian one) would be a huge understatement.
